Paleo Avocado and Poached Eggs Recipe

This Paleo Avocado and Poached Eggs recipe is a filling and healthy breakfast. The creamy avocado and perfectly poached eggs combine to make a delicious and nutritious meal that will keep you full and energized for hours.

Ingredients

  • Cook Time: 5 minutes
  • Total Time: 10 minutes

Instructions

  • Fill a small pot halfway with water and bring it to a gentle boil over medium heat.
  • Separate the eggs into small bowls or ramekins.
  • Stir the apple cider vinegar into the simmering water to form a whirlpool.
  • Pour each egg, one at a time, into the center of the whirlpool.
  • Cook until the egg whites are set but the yolks are still runny, about 2-3 minutes.
  • Slice the avocado in half and remove the pit while the eggs are cooking.
  • In a small bowl, mash the avocado and season with salt and black pepper to taste.
  • When the eggs are done, remove them with a slotted spoon and drain excess water on a paper towel.
  • Place each egg on half an avocado and top with any desired toppings.
  • Serve right away and enjoy.
