Paleo Beef Steak with Mushrooms, Potatoes and Carrots Recipe

This Paleo beef steak recipe is a quick and easy way to make a classic steak dinner with roasted vegetables. Tender beef is seared to perfection in a hot skillet after being seasoned with salt, pepper, garlic powder, and onion powder. Tossed in the remaining oil, sliced mushrooms, baby potatoes, and baby carrots are roasted until tender and lightly browned. After that, the steak is placed on top of the vegetables and returned to the oven for a final round of cooking. The end result is a hearty and satisfying meal suitable for any occasion.

  • Cook Time: 45 minutes
  • Total Time: 55 minutes

Instructions

  • Preheat the oven to 400°F.
  • In a large oven-safe skillet over medium-high heat, heat the olive oil.
  • Salt, pepper, garlic powder, and onion powder season the beef steak.
  • Cook the steak in the skillet for 3-4 minutes per side, or until browned.
  • Set the steak aside after removing it from the skillet.
  • Stir in the mushrooms, potatoes, and carrots to coat with the remaining oil in the skillet.
  • Season with salt and pepper to taste.
  • Bake the skillet for 20-25 minutes, or until the vegetables are tender and lightly browned.
  • Remove the skillet from the oven and place the steak on top of the vegetables in the skillet.
  • Return the skillet to the oven and bake for another 10-15 minutes, or until the steak is cooked to your liking.
  • Allow 5 minutes for the steak to rest before slicing and serving with the vegetables.
