Paleo Salmon with Zuchinni and Spinach Recipe

This paleo salmon recipe is a tasty and nutritious way to enjoy salmon. Salmon fillets are seasoned with a flavorful spice blend and baked on top of sautéed zucchini and spinach. This dish is ideal for a quick weeknight dinner.

Ingredients

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Instructions

  • Preheat the oven to 400°F.
  • Combine paprika, garlic powder, thyme, salt, and black pepper in a small bowl.
  • Rub the spice mixture over each salmon fillet.
  • Warm the olive oil in a large oven-safe skillet over medium-high heat.
  • Cook the sliced zucchini in the skillet for 2-3 minutes on each side, or until slightly browned.
  • Cook until the spinach leaves are wilted in the skillet.
  • Remove the salmon fillets from the skillet and place them on top of the vegetables.
  • Serve the salmon fillets with lemon slices on top.
  • Place skillet in oven for 12-15 minutes, or until salmon is cooked through.
  • Serve immediately and enjoy.
