Instructions

  • Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • In a large mixing bowl, combine the sliced acorn and butternut squash, coconut oil, cinnamon, nutmeg, and sea salt.
  • Bake the squash slices in a single layer on a baking sheet for 30-35 minutes, or until tender and lightly browned.
  • Prepare the sweet potato fries while the squash is cooking by tossing the sweet potato slices with olive oil, garlic powder, paprika, and sea salt.
  • Bake the sweet potato fries in a single layer on a second baking sheet for 25-30 minutes, or until crispy and lightly browned.
