Instructions

  • Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
  • Toss the sliced onions and smashed garlic with 1 tablespoon avocado oil, thyme, 1/2 teaspoon sea salt, and black pepper in a baking dish.
  • Cook for 20-25 minutes, stirring occasionally, until the onions and garlic are caramelized and golden brown.
  • Heat the remaining avocado oil in a skillet over medium-high heat while the onions and garlic roast.
  • Season the steak with the remaining black pepper and sea salt.
  • Once the skillet is hot, add the steak and cook for 3-4 minutes per side for medium-rare, or until done to your liking.
  • Allow the steak to rest for 5-10 minutes before slicing it crosswise.
  • Serve the steak slices alongside the roasted onions and garlic.
